Puff Pastry Buffalo Chicken Bites
Tailgating is a big deal where I’m from.
And no, I am not talking about following too close in your vehicle…although I DO live in NJ and the drivers here are aggressive to say the least.
The tailgating I am talking about is the “party in a parking lot” kinda tailgate. Where an informal meal is served up along side of anything and everything that usually does not involve utensils.
In case you don’t know, Derek, Cal and I are big Philadelphia Eagles fans and although we do not get the chance to tailgate often, we will invite friends and family over to watch the games!
Either way, these Baked Buffalo Chicken Pastry Bites are my favorite thing to serve as an appetizer and are usually gone by halftime!

I first tried this mouthwatering combo at a local brewery. They served it on a pizza!
I tell you, It was love at first taste!
The sweet sugar balances out the hot sauce perfectly so I looked to recreate it in a fun bite-sized way.
These Buffalo Chicken Brown Sugar Bites are quick, easy and most importantly, tasty as heck! Even in the middle of the winter! Football season cannot come soon enough…
How To Cut Your Puff Pastry Rectangles
I used puff pastry to make these buffalo bites. It is my absolute FAVORITE item I keep in the freezer! And when I need a quick game day appetizer, I always pull a package out. I could throw just about anything on top and it would be delicious.
To cut these scrumptious puff pastry rectangles, I used a fancy cookie cutter I had found in my pantry. You could absolutely just use a normal cookie cutter OR just a knife!
Rectangles are easier to eat but any shape would work! If you had a football cookie cutter, THAT would be awesome!!
Just be aware that puff pastry PUFFS in the oven. So pricking holes in your pastry before baking helps to keep them tame. Regardless, you can always poke them down if they are too ‘puffy’ to place the buffalo chicken mixture on.
I used mozzarella cheese to sprinkle on top but cheddar, blue cheese or Monterey jack would work well too! Also, adding chopped chives to the top adds both some color and a freshness that is definitely needed!
How To Make This Appetizer Ahead Of Time
The best way to do this ahead of time so you will be ready for the game is to do EVERYTHING but bake them!
What you want to do is cut your puff pastry rectangles, add your buffalo chicken mixture to each, and place in the fridge until the game is about to start!
Then pre-heat the oven about 15 minutes before you want to eat them and place them inside until the puff pastry puffs up nicely. Then remove, add your cheese, and put back in the oven until your cheese melts!
Finally, top with scallions and get ready to cheer on your team with a delicious appetizer that will be gone way before halftime!

Baked Buffalo Chicken Pastry Bites (with brown sugar)
Ingredients
- 1 Sheet Frozen Puff Pastry (store bought)
- 1 Cup Shredded Chicken*
- 1/4 Cup Buffalo Sauce (homemade or store bought)
- 1/2 Cup Shredded Cheese (I like mixing monterey jack, mozzarella and blue!)
- 1 Tbsp Brown Sugar
- Optional Chopped Chives or Scallions ((for topping))
Instructions
- Preheat oven to 425 degrees F.
- Mix shredded chicken, buffalo sauce and brown sugar in a bowl and set aside.
- Prepare puff pastry squares by cutting semi-thawed pastry sheet into 36 vessels. See how I do mine in the photos! Bake until golden browned. (about 10 min)
- Take out and top baked pastry vessels with chicken mixture followed by a sprinkling of cheese.
- Place under broiler for a few minutes until cheese melts. Finish with chives or scallions and serve!
