White Cannellini Bean Garlic Dip
This white bean dip recipe has become my go to snack lately. It is the best dip because of how easy and healthy it is!
Canned cannellini beans with fresh garlic and herbs, flavor is not lacking!
The Best Way To Prepare This Bean Dip
Use the right beans! Cannellini beans are creamier than most beans so don’t substitute them!
You need a food processor to blend all of the ingredients into a smooth and creamy dip. If you do not have a food processor, the texture of the dip will be iffy.
Bean Dip With Garlic Oil
If your a garlic lover like me, you know there’s no such thing as too much garlic.
So feel free to add more garlic if you like!
Just make sure you keep one thing in mind about garlic…it burns VERY easily!!
So when you simmer your garlic in your oil, do it LOW and SLOW! Choose the SMALLEST burner your stove has! You should barely see the teeny bubbles simmering underneath!
If you start seeing ANY browning happening on the garlic, take it off the heat immediately. You may be able to still use it if it hasn’t yet burned. You can put it back on in intervals if needed.
Burnt garlic is bitter garlic. Believe me, people will know. So don’t use it if you think you burned it.
It doesn’t take long so don’t rush it. The longer you simmer, the more time you allow the garlic to infuse the oil! I recommend at the very least, an absolute minimum of 10 minutes.

White Cannellini Bean Dip With Garlic
Ingredients
- 2 15 oz. Can Cannellini White Beans (+ 1 Tbsp. reserved bean liquid)
- 1/2 Extra Virgin Olive Oil
- 8-10 Cloves Garlic
- 1 Tsp. Salt
- 2 Tsp. Freshly Squeezed Lemon Juice
- 1/2 Tsp. Crushed Red Pepper Flakes
- 1 Tbsp, Chopped Fresh parsley for garnish
Instructions
- Roughly chop your garlic cloves and add them, your red pepper flakes and the olive oil in a small saucepan and simmer for at least 10-15 minutes on the LOWEST heat setting your stove has. You should see very small bubbles underneath barely simmering. Do NOT burn your garlic, this will ruin the flavor! Once you start to see the garlic browning, take it off the heat.
- When garlic oil is ready, add it to a food processor, with your beans, (the 2 tbsp reserved liquid) and salt, and puree until smooth. (about 30 seconds) If consistency is too thick for your liking, add more of the bean liquid, olive oil or water.
- Serve with pita, crusty bread, wheat thins or veggies!

What a great idea for a healthy dip for snacking! Love that you sauté the garlic to infuse the olive oil, sounds like this dip has some amazing flavor!
Thanks Chelsey!
Oh, I’ve made this white cannelini dip before. Even fooled my husband who doesn’t like beans into eating it. With the right amount of garlic, he’ll eat anything, ha! It’s simple, inexpensive, healthy, and delicious starter or a snack. Thanks for reminding me about this recipe!
