Pimento Cheese Stuffed Celery Sticks

These Pimento Cheese Stuffed Celery Sticks are so easy to make and can be made a day or two ahead of time! Stuffed with cream cheese and pimento peppers, I like to serve these during the day or as a brunch time snack!

Making these pimento cheese stuffed celery sticks is super easy! I use cream cheese as the base for the stuffing because I think it goes well with the celery. Plus it is thick enough so when you add your pimentos with its juice, the filling wont be too runny.

Make sure you choose a good stalk of celery. Crunchy celery is a MUST. Don’t toss your wilted celery! A tip I love is to soak the celery in cold water for an hour or so. That will bring life back into it! I works very well! Check out these celery tips here!

Make sure to clean your celery WELL! A lot of dirt can get trapped inside. I like to use the celery on the outside of the stalk. It is greener and a bit less bitter than the sticks on the inside. The bright green color is prettier too. Plus, they have a wider crevice to fill with your stuffing!

Once cleaned, cut your celery into 3-4″ sticks and fill using a small spoon.

How To Make Your Pimento Cheese Filling

Use a standing mixer or hand mixer, cream together your cream cheese, pimento peppers, cheese and Worcestershire sauce. Add salt to taste and fill up your sticks!

I use jarred pimento peppers in this recipe. They are easy to find and last for a long time in my pantry!

You could really use any peppers in this recipe. Try roasted red peppers or if you like spicy food, try jalapeno peppers or chili peppers!

Ingredients

  • 4 Celery Stalks
  • 4 oz. Cream Cheese
  • 1/2 Cup Shredded Cheddar Cheese
  • 1/2 Cup Sliced Pimento Peppers (Drained) ((reserve 1 tbsp juice))
  • 1/2 Tsp. Onion Powder
  • 1-2 Dashes Worcestershire Sauce (*Optional)

Instructions

  • In a mixer or mixing bowl, cream together all ingredients until fully mixed.
  • Trim and clean 4 sticks of celery. Then cut each stick into 3" to 4" sticks. (However long you prefer)
  • Fill each stick with filling using a spoon. Serve cold.

Recipe Notes

This recipe makes about twelve 3-4″ sticks.
Depending on the size of your celery, you may need more or less filling.
