Vanilla Microwave Fudge Without Condensed Milk
With summer FINALLY here this EASY microwave vanilla fudge recipe was calling my name! I made these bites without condensed milk and used fresh cream instead giving each bite a rich creamy chocolate flavor.

Fudge screams SUMMER to me! So I wanted to create an EASY recipe that was also festive enough to make for any of the summer holidays like Memorial Day, 4th of July or Labor Day!
You could always change out the red, white and blue sprinkles to suit other holidays as well!

Fudge Without Condensed Milk
The first time I made fudge, I did NOT use a microwave. The fudge came out okay but not GREAT. The taste was definitely there but the texture was iffy. I used condensed milk like the recipe told me but I thought it came out TOO sweet for my liking.
So the next time, I decided I wanted to make a vanilla fudge recipe using the microwave and with NO condensed milk.
So I tried a few different ways of making the fudge using milk, cream, butter, vanilla, etc….and I found a winner! WITHOUT condensed milk!
And the microwave is so much easier than using a double boiler or pot! Trust me!
The consistency is what you would expect from your classic fudge so I do not miss it! Read on to learn my tips for making the best microwave fudge.

What are the typical ingredients to make fudge?
Your typical fudge recipe contains:
- sugar
- butter
- chocolate
- vanilla
- sweetened condensed milk
- chocolate
This is just for the base. Many mix-ins like nuts or marshmallows are always an option!
Old Fashioned Fudge vs. Today’s Fudge Recipes

Your classic fudge recipes is made by mixing butter, sugar and milk over a sauce pan until it reaches 240 degrees F. Cocoa powder is added to make chocolate fudge.
However, since this old-fashioned fudge recipe is a little more difficult to make considering the temperature is key, most people revert to using condensed milk.
If using condensed milk, no thermometer is needed. Just follow the directions and the consistency of your fudge should be perfect.
For these vanilla cream fudge bites, I did not use sugar since the white chocolate already has sugar in it. I also did not use sweetened condensed milk OR evaporated milk, which I do not think is necessary. Instead I used natural heavy cream and they turned out great!
How To Make Microwave Vanilla Fudge
I do NOT use condensed milk. Again, I think it is too sweet for my liking.
The steps to make microwave fudge:
- heat cream, butter and vanilla in the microwave until HOT not boiling!
- add hot cream to white chocolate and stir
- reheat chocolate in the microwave for 10 seconds at a time until it is fully melted
- place in molds or pan and allow to completely cool (1-2 hours)
That’s it! The only way you can mess this up is by scorching your chocolate. You can do this by leaving it in the microwave too long. If you seize your chocolate, you can fix it! See video below.
And if you’re like me, you probably only use one button on the microwave to reheat EVERYTHING. But did you know there are other reheating options?! Who knew!?
Well…I always knew but was in denial.
So if your microwave has the “MELT CHOCOLATE” option, use it! It helps!
But for this recipe, I did NOT use that. I simply hit “reheat” and timed it. As long as you don’t go OVER the time noted, your chocolate will be fine.

Here is what I did for these easy fudge bites…

Melt your cream, vanilla and butter in the microwave for 30 seconds and then add to your white chocolate. Reheat until chocolate is fully melted.

Add sprinkles if using and then transfer to mini muffin tin or pan.

Top with more sprinkles and let come to room temperature.

Enjoy or store in fridge for up to a week.

Easy Microwave Vanilla Cream Fudge (without condensed milk)
Ingredients
- 2 1/2 Cups White Chocolate Chips
- 1/4 Cup Heavy Cream (or half and half)
- 1 Tbsp Salted Butter ((add 1/4 tsp. salt if using unsalted))
- 1 1/2 Tsp Vanilla Extract
- 2 Tsp. Sprinkles (Nonpareils) (*Optional)
Mini Muffin Tin
Instructions
- Heat cream, butter and vanilla in the microwave for 60 seconds or until steaming HOT.
- In another bowl have your chocolate chips ready. Then add the hot cream immediately to the chocolate chips and stir as much as you can. (the chips wont melt right away.) Place again in the microwave for 15 seconds. Take out and stir again. Repeat for another 15 seconds and stir, stir, stir! If chocolate still is not fully melted, repeat until it is.
- Add sprinkles to melted chocolate and stir. Use a mini ice cream scoop and add one full scoop to your mini muffin tins. Top with more sprinkles if desired. If you're using another mold or pan just make sure the fudge is at least 1-2 inches thick.
- Allow to cool completely. Exact time will depend on the temperature of your home and size of your mold. (Allow at least 2 hours to completely cool)
