A perfect guilt-free healthy snack that also tastes delicious!! These fun protein packed energy bites are also Paleo, Low Carb and Vegan!

Summer is around the corner and I’m 37 weeks pregnant! During these last 37 weeks I have pretty much eaten whatever I wanted. I mean, isn’t that what most women do? It’s hard not to!
My go-to excuse was, “I am eating for two”. It wasn’t until recently that I read you really shouldn’t be “eating for two”.
So here I am, snacking on these Healthy Peanut Butter Oat Energy Bites because I know they are good for me and baby! PLUS they will give me the boost of energy I need to make it to the finish line! 🙂
I also admit I have small hopes of fitting into one of my pre-baby bathing suits this summer and so these bites are just the snack to do that!
They are super delicious, super healthy and super easy to make.
Now if I only could stop eating ice cream every night…
Heart Healthy, High In Protein & Filling!
I try to eat a handful of nuts every day! It really is all you need to fulfill your omega 3’s.
I will buy walnuts, cashews, hazelnuts, almonds and pecans and add them all to a larger Tupperware container. Then I will grab a handful of mixed nuts daily. I even through in some seeds like pumpkin or sunflower which are a bonus!
So one day, I decided to experiment.
I threw a few handfuls of those nuts to a food processor as well as some oats and peanut butter, to bind everything together and pureed everything with my fingers crossed!
After a few different experimental recipes, I believe I got the right consistency.
As for flavor, sweetness was a big concern.
Keep in mind, many of the famous peanut butter brands we have come to love growing up have A LOT of added sugars and other unknown ingredients that make them…ehh.. lets just say NOT so healthy!
If you have ever purchased REAL NATURAL peanut butter, you will know immediately. The consistency is not the same. It has a much thinner consistency and zero sugar! Not surprisingly, most of us prefer the taste of the sugary brands instead.
So just keep this in mind!
If you want to make these energy bites truly healthy, use ALL NATURAL peanut butter! NO it is not as sweet or as tasty but the maple syrup makes up for the lack of sweetness naturally.
If you do NOT have a natural peanut butter on hand and don’t care about the added sugars, use what you have and just omit the maple syrup!

“Can I Eat Oatmeal Without Cooking It?”
This is something I have always wondered. And the answer is YES!
Another question I’ve always wondered was if eating uncooked oats is more or less nutritious?
According to my research, it is more nutritious if you eat it RAW. This actually applies to most foods so I was not surprised to find this out. Something I WAS surprised to find out that was that cooked oats lose a TON of nutrients! I didn’t think it was that big of a difference, nutrient-wise, but apparently I was wrong.
I was happy to read this because I had already been eating these No Bake Peanut Butter Oat Energy Bites on and off for the last year or so! I will make a larger batch once a week or so and store them in plastic baggies in the freezer. Then in the morning, I will take out a few and bring them with me to work or leave them in the fridge for snacking later.
TIP* Make sure you use the QUICK OATS for this recipe. Otherwise your oats will be hard!
Here are the tools I used to make these energy bites! Throw one in your Amazon cart if you need it!
Here are the steps I took…

Add a mixture of your favorite heart healthy nuts to a food processor or blender.

Add the rest of the ingredients and blend until fulled combined (about 30 seconds). Use a mini ice cream scoop to scoop uniform bites.

Press and roll mixture carefully into bite-sized balls. Store in the fridge or freezer!

No Bake Peanut Butter Oat Energy Bites
Ingredients
- 1 Cup Quick 1-Minute Oats
- 2 Tbsp. Natural Peanut Butter
- 1 Cup Assorted Nuts ((unsalted))
- 2 Tsp. Coconut Oil
- 1/2 Tsp. Vanilla Extract
- 1 Tbsp. Pure Maple Syrup
- 1/4 Tsp. Salt ((only if using unsalted nuts))
Instructions
- Optional* Toast the mixed nuts in a skillet over medium heat for 1-2 minutes or in the oven on a sheet pan at 350 degrees F for 5-10 minutes. Watch them carefully since they tend to burn easily!
- Add all ingredients to a food processor or blender and puree until fully incorporated. You may need to scrape sides down once.
- Use a mini ice cream scoop to scoop and roll into 12 bites. Store in fridge for up to a week or freezer for up to 3 weeks. Enjoy!
Recipe Notes
- This recipe is made with all natural peanut butter which does not have any added sugars. If you are using brands like Jif or Skippy, you will want to omit the maple syrup so your bites do not end up being too sweet.
- Since we are not pre-cooking the oats, make sure you use the quick oats!!

These peanut butter energy bites are very tempting. Now that you mentioned it, I need to look for the Natural peanut butter, I found there is always too much sugar in the bars they sell at the Supermarket. so it could be a good alternative.
