Thanksgiving dinner all in one bite! Turkey, brie, cranberries and rosemary all piled onto a crispy bite sized slice of bread. These Turkey Cranberry Crostini are an easy yet creative holiday appetizer that your guests will absolutely devour.
Thanksgiving Crostini Appetizer
My parent’s house has always been where my family goes every Thanksgiving.
I remember when growing up, my mother would stay awake until the wee hours of the night cooking and baking. I had a hard time falling asleep because of the amazing smells that just filled the whole house.
I just couldn’t wait to get up and start eating!
My mother is someone who always goes a little nuts with cooking. By this I mean, she never runs out of anything… ever.
But she doesn’t just cook a turkey and some mashed potatoes…she ALSO makes, stuffed shells, filet, salmon, rice, veggies, stuffing, corn…and that’s after all of the appetizers!
So that goes to say that there are leftovers for dayssss…
I honestly question if we could throw another Thanksgiving dinner with what is still left…I’m not lying.
With that said, most of us can usually go two days tops eating leftovers. After that, you just gotta change it up.
But before you do, use some of those leftovers to make these Turkey Cranberry Crostini! It is an easy midday snack or lunch that adds some needed crunch to those mushy leftovers.
Cranberry Sauce
I have never been a huge canned cranberry sauce or cranberry jelly fan…
It just looks so unappetizing straight out of the can with those indentations on the sides.
BUT with a little jazzing up and some savory items added to it, it is absolutely delicious!!
I suggest using whole cranberry sauce like I did here! The addition of orange zest and rosemary takes a boring sauce over the top. The longer these flavors simmer, the better!

Thanksgiving dinner in one festive bite! These crostini are easy to make and could not be more festive! Make these for lunch the next day or for a holiday cocktail party!
- 1 Fresh Baguette
- 1 lb. Sliced Turkey Breast
- 1 14 oz. Can Whole Berry Cranberry Sauce
- 10 oz. Brie Cheese
- 1/4 Cup Olive Oil
- 1 Tbsp. Fresh Rosemary
- 1 Small Orange Zested
- 1/2 Tsp. Salt
- 1/4 Tsp. Pepper

Preheat oven to 350 F. Slice baguette into 1/4 " rounds and lay on baking sheet.

Add salt and pepper to olive oil and mix. Brush each round generously with olive oil and bake for 10 minutes.

While baking, add cranberry sauce, orange zest and chopped rosemary to saucepan. Simmer over medium to low heat for 10 minutes.

Take out crostini and shmear some brie cheese onto each slice.

Then add a little bit of turkey to each crostini and finish with a dollop of cranberry sauce!

Serve with rosemary as a garnish if desired.
Party Tips*
These are best served warm!
The sauce does not need to cool before adding!
Keep finished crostini in the oven on 'warm' until guests arrive!
