Marinated Antipasto Appetizer Skewers
These mini appetizer skewers are a fun party snack to serve guests that pairs especially well with a nice bottle of wine! You’ll want to keep this recipe in your back pocket.
The skewers are marinated in an easy Italian marinade and served cold so you can make them the night before and not have to worry about them until guests arrive!
How To Skewer Your Antipasto Using Sticks
There is no right or wrong way to skewer food. However I DO believe there is a BETTER way to skewer things.
I like to think about what foods pair better together and how you can get the best flavor combinations in each bite!
For these skewers, I took my mini wooden skewers and separated the cheeses from each other so one bite does not have cheese and more cheese. I also tried to put the salami in the MIDDLE of your stick so you can enjoy it in WITH the cheeses and peppers.
How can you “change up” your antipasto skewers?
Try changing up the deli meat or cheeses! Here are some ideas to add/substitute:
- An assortment of deli meats such as salami, capocollo, prosciutto, mortadella, and bresaola
- An assortment of olives green to black from stuffed to marinated
- An assortment of cheeses from Parmesan to mozzarella
- Peppers from roasted to sweet to hot
- Crusty bread
These are the most commonly served foods on an antipasto platter.
If you want to go above and beyond, you can also add these to your skewers:
- Pepperoncini (hot or mild peppers)
- Cubes of breads such as a baguette or focaccia
- Marinated artichoke hearts
- Marinated Gigante Beans (cannelini)
- Marinated chickpeas (these may be hard to skewer!)
- Roasted asparagus spears
What is the difference between antipasto and antipasti?
One simple answer. Antipasti is plural! 🙂
A Make Ahead Cold Appetizer!
If I find a good ‘MAKE AHEAD’ appetizer that can also be served COLD, I’m sold.
The hardest part about hosting guests is not preparing the food, it’s keeping the food WARM. If that is taken out of the equation, hosting is just not as stressful.
These antipasto skewers are a quick way to satisfy your guests before you head out to eat or serve dinner.
You can skewer them the day or night before, drizzle the herb oil over top and let them sit in the fridge overnight. Then pull them out the next day and uncork your favorite bottle of vino!
I am a bread lover so I suggest serving with a crusty bread or pita bread on the side. It will be great for sopping up the leftover herb oil!

Ingredients
- 12 oz. Roasted Red Peppers
- 8 oz. Bocconcini ((Mozzarella Balls))
- 8 oz. Sharp Cheddar Cheese ((White))
- 7 oz. Genoa Salami
- 7 oz. Pepperoncini
Olive Oil Marinade
- 1/4 Cup Extra Virgin Olive Oil
- 1 Tsp. Italian Seasoning
- Salt and Pepper ((to taste))
Instructions
- Prepare your olive oil marinade by combining the ingredients in a small bowl.
- Dice up your cheese and salami into 16 bite sized cubes.
- Chop your roasted peppers into 16 rectangles twice the width of your cheese cubes. Then FOLD them in half. (This is how you will skewer them.)
- Slice off the stems from 16 pepperoncinis.
- Begin skewering your antipasto skewers starting with the cheddar cheese, then salami, then pepperoncini, then pepper and finally the mozzarella. You can really skewer any way you desire but try and separate the cheeses!
- Drizzle herb oil over top and serve or marinate in the fridge until ready to serve!
Recipe Notes
- Depending upon the length of your skewers, you may get more or less skewers.
- Feel free to add more of one ingredient or add some of the other antipasto items I listed above.
- Marinating these will increase the flavor!
- Your skewers should last 3-4 days in the fridge covered.
