Quinoa has become SO popular these days!
Remember when it just started making its way into restaurants and stores??
No one really knew how to pronounce “KEEN-WA” or really knew what the heck quinoa was?
Usually I get annoyed by trendy foods but after learning how healthy AND tasty quinoa is, I quickly became a HUGE quinoa fan.

- Gluten Free
It really is a health food!
I am sure that’s why it has become so popular!
When I think of how to cook quinoa, I think of how I would cook rice.
It is just as versatile and more tasty in my opinion.
You can find quinoa in your local grocer in either the rice or gluten free aisle. They sell it in 3 different colors, red, black and white. There really is not much of a difference in my opinion other than the color. Do you have a preference??
6 Ingredients in Just 15 Minutes
Obviously all of my recipes are focused on the idea of being able to eat the food at hand in one to two bites.
Naturally, things that are loosely cooked like quinoa, definitely make it a challenge! Even using a muffin tin..Speaking of muffin tins, have you tried my Cheesy Egg n’ Chive Bites or my Mini Maple Corn Muffins yet??
So some of my attempts failed as the quinoa fell apart or came out too dry.
But I am happy to say these quinoa bites are a winner!!
I tried keeping it simple and quick because when guests come over we don’t have 
The fiber and protein make these a filling snack and can be thrown in your kids lunches OR laid out for a crowd!
They can be frozen but are better fresh.
Peas and Parmigiano-Reggiano
Does anyone LOVE peas as much as me?!
I think they got a bad rep way back when our moms used to cook the life out of them to the point of no return.
Take my word for it when I say, frozen peas don’t need to be cooked.
They need to be jussssst warmed through. Maintaining a crunchy bite is key!
The lemon zest goes perfectly adding a bit of brightness. Don’t leave this out.
The Parmigiano-Reggiano is your salty component since quinoa needs salt.
Using an egg white instead of the yolk, keeps these from being too “eggy” while doing it’s job of holding the quinoa together.
Quinoa perfection!
So here’s how I did it…

Mix together all of the ingredients well in a small bowl!

Fill up your greased muffin tins with quinoa mixture and bake for 14 minutes at 350 F!

The edges should be lightly browned.

Pop out of tins and serve warm!

Easy 15 Minute Quinoa Bites With Peas
Ingredients
- 1/2 Cup Uncooked Quinoa ((Any Color))
- 1/2 Cup Grated Parmesan Reggiano
- 1/2 Cup Frozen Peas
- 1/2 Cup Water
- 4 Large Egg Whites
- 4 Tbsp Melted Butter
- 2 Tsp. Lemon Zest
1 Mini Muffin Tin
Instructions
- Preheat oven to 350 F and mix all ingredients in one bowl well! (I recommend whisking the egg whites first then add in the rest!)
- Fill (greased) muffin tins all the way up with quinoa mixture.
- Bake for 14 minutes or until edges are golden brown. Enjoy!
