These easy Miniature Lemon Berry Yogurt Popsicles are the perfect bite sized treat. With lemon curd, fresh blueberries and creamy yogurt, you will want to have these mini popsicles for breakfast, dessert AND a midday snack!
Easy and Healthy Mini Popsicles
These miniature lemon yogurt popsicles are cute, healthy and super easy to make!
For breakfast, I love having yogurt with some sort of fruit on top. I don’t think I’m the only one here.
My go-to breakfast has been Starbucks yogurt parfaits which also have lemon curd and blueberries layered beautifully topped with granola. So I thought, why not make that into a popsicle!
It is the hottest month, August, so these mini popsicles really are perfect for breakfast being yogurt based! You could even trick your kids into thinking they’re eating ice cream for breakfast!
The creaminess of the yogurt goes well with the tartness of the lemon curd. If you do not like overly sweet things, I would omit the honey in the yogurt. You will get plenty of sweet from the lemon curd itself.

Ice Cube Tray Popsicles
My favorite part?? The gorgeous colors! And an ice cube tray allows you to layer the yogurt and lemon curd perfectly to create the beautiful swirls!
Unless you do not have an ice cube maker, I am sure you rarely use your ice cube trays anyway right!?
I know I rarely do unless I am freezing herbed oil, OR about to drink an old fashioned. Other than that, they stay put.
But why? They are the perfect size to make miniature popsicles! They have all different sized trays these days but any one would work!
**This tray is like the one I used! It is LARGER and square so it makes the perfect popsicles.
Yogurt is the perfect foundation for making any kind of popsicles so feel free to play around and have fun while doing so! Get creative! When Cal gets old enough, I plan on allowing him to throw anything he wants in the tray to see what we end up with! I have a feeling fruity pebbles or some kind of candy will be tested..
Other miniature yogurt popsicle options:
- Use any fruit fresh or frozen!
- Throw in some extracts for flavoring (if using plain yogurt)
- Add a marmalade or jelly instead of fruit!
- Throw in some fresh herbs like mint or basil for color and flavor
- Use coconut yogurt if you are vegan
Here are the easy steps…
Mix up the yogurt, vanilla and honey.
Add berries to the bottom.
Add some lemon curd and yogurt gradually tossing in a blueberry here and there.
Fill up to the top so you can see all the yogurt, lemon curd and blueberries. Freeze for an hour before adding sticks.
After at least 3-4 hours, take out and serve on ice! Enjoy!

Miniature Lemon Berry Yogurt Popsicles
Ingredients
- 1 Cup Plain Yogurt
- 1/4 Tsp. Vanilla Extract
- 1/3 Cup Lemon Curd ((Store-bought))
- 2 Tsp. Honey
- 1 Cup Fresh Blueberries
Large Ice Cube Tray
Popsicle Sticks
Instructions
- Mix together yogurt, vanilla and honey. I recommend using non-greek yogurt. Greek yogurt is too thick and may be difficult to scoop into tray. If you do use Greek yogurt, you will need to thin it out with cream or milk until it is easy enough to scoop!
- Now, this is the fun part! Add a few blueberries followed by the yogurt and lemon curd. There is no wrong way to do this! I like to place the blueberries around the surface so your guests can see them!
- Place in freezer for about 1 hour until semi-frozen then insert popsicle sticks in the center.
- Leave in freezer for at least another 2 hours. (This time may be shorter or longer depending upon the size of your ice cube tray!) Serve on ice cubes and enjoy!
Recipe Notes
- Keep in mind that lemon curd is sweet! So use more or less depending upon what you desire.
- These can be made with any type of berry!
- Get your kids to help with layering the popsicles!
